Peanut butter vanilla cream oatmeal

    1/3 cup Regular Oats, uncooked
    1 t coffeemate coffee creamer sugar free french vanilla (powdered)
    1T vanilla pudding mix, fat free, sugar free
    1 tbsp Skippy Natural Chunky Peanut Butter
    2 pumps Torani surgar free vanilla syrup
    1/2 cup  1% milk
    dash of salt
    In a medium bowl, combine creamer with a little warm water. Add pudding mix and syrup. Stir well. Add oats and milk; stir.  Add peanut butter and sprinkle with a dash of salt.  Microwave for 3 minutes on high.  Be sure to watch it because it can overflow.   Remove from microwave and mix in the peanut butter.   Let sit to thicken about a minute.  If too thick add water or milk and stir well.

Peanut butter Pumpkin Brownies

This recipe is DELCIOUS. Don’t let the pumpkin keep you from trying it.
Diet friendly!!

1 box devils food cake mix
1 15 oz can pumpkin (not pumpkin pie filling)
4 T reduced fat creamy peanut butter
2 T french vanilla syrup (I use torani)
water to thin the batter

Mix everything together and put in a 9 x 13 pan. Bake at 350 for 25 minutes or until they are done. Makes 12 BIG brownies.

Great Breakfast or Snack

OK, this recipe comes from a local cafe (http://www.cafegouda.com/) but I’ve added a second variation.  Try it and let me know what you think.  If there’s an ingredient you don’t like, leave it out or substitute it with something similar. 

1 large flour tortilla (white or whole wheat)

1 banana, cut into chunks

peanut butter to taste (couple tablespoons)

honey to taste (drizzle over peanut butter)

vanilla yogurt to taste (about 1/4 cup)

granola (any flavor)

If desired, put peanut butter and honey in a small microwavable bowl to soften (about 30 seconds).  Mix PB and honey well, then add chunks of banana.  Scoop out onto tortilla and spread in the middle.  Spoon yogurt over this, then add granola and wrap like a burrito. 

If you don’t want to soften the PB and honey, spread PB over tortilla, drizzle with honey, drop chunks of banana over honey, then continue as above.

 Chocolate Peanut Butter Variation:

Spread PB over tortilla.  Instead of drizzling honey, use chocolate syrup.  Continue as above, using chocolate peanut butter granola if available (I found it at a local health food store where they make their own).  You can also use Nutella hazelnut spread in place of or in addition to the PB.
