Great Breakfast or Snack

OK, this recipe comes from a local cafe (http://www.cafegouda.com/) but I’ve added a second variation.  Try it and let me know what you think.  If there’s an ingredient you don’t like, leave it out or substitute it with something similar. 

1 large flour tortilla (white or whole wheat)

1 banana, cut into chunks

peanut butter to taste (couple tablespoons)

honey to taste (drizzle over peanut butter)

vanilla yogurt to taste (about 1/4 cup)

granola (any flavor)

If desired, put peanut butter and honey in a small microwavable bowl to soften (about 30 seconds).  Mix PB and honey well, then add chunks of banana.  Scoop out onto tortilla and spread in the middle.  Spoon yogurt over this, then add granola and wrap like a burrito. 

If you don’t want to soften the PB and honey, spread PB over tortilla, drizzle with honey, drop chunks of banana over honey, then continue as above.

 Chocolate Peanut Butter Variation:

Spread PB over tortilla.  Instead of drizzling honey, use chocolate syrup.  Continue as above, using chocolate peanut butter granola if available (I found it at a local health food store where they make their own).  You can also use Nutella hazelnut spread in place of or in addition to the PB.
