Chicken Tetrazzini


This is a comforting favorite from Justin’s family.

7 oz spaghetti broken into small pieces

1/4 c butter

1/4 flour

1/2 tsp salt

1/4 tsp pepper

1 c chicken broth

1 c whipping cream or half and half

2 T sherry (optional)

2 c cooked cut up chicken or turkey

1 4oz bottle of mushrooms*

1/2 c grated Parmesan

* We use fresh.  Saute fresh mushrooms, onion, and garlic in butter

Preheat oven to 350.  Cook spaghetti as directed on package and drain.  Heat the butter in a sauce pan until melted.  Stir in flour, salt and pepper.  Cook while stirring until smooth and bubbly.  Stir in broth and cream.  Heat to boiling, stirring constantly.  Boil for one minute.  Stir in spaghetti, sherry, chicken, and mushrooms.  Pour into an ungreased 2 qt casserole.  Sprinkle with cheese and bake uncovered for 30 minutes.
